The University is currently made up of several schools.

- School of Landscape and Gardening
- School of Leadership and Management
- Academy for Innovation and Research
The departments of art, design, media came from Falmouth College of Arts, as it was known before the college was awarded the university college title in 2005. The performance department was created following the merger with Dartington College of Arts in 2008. In 2012 a new school was added known as the Academy for Innovation and Research allowing the college to offer research degrees. The courses under the Falmouth Landscape and Gardening School (FLAGS) have been temporary suspended.
